The Summit Restaurant’s menu showcases the best of European cuisine with a west coast twist

The menu is expertly-crafted by Michelin star trained Executive Chef Mario Gross and Pastry Chef Matthias Conradi. These celebrated chefs are known for their sophisticated creations that feature Vancouver Island twists on the European gourmet kitchen with seasonal ingredients from across Cowichan.

The evening’s first course will begin with scallop ceviche topped with mole verde, a microgreen salad and focaccia croutons. Next, guests will be treated to grilled octopus accompanied by house-made hummus, mint yogurt and eggplant cream. The third course will showcase a locally-raised lamb tenderloin baked in olive bread alongside chorizo bean ragout, lamb tortellini and eggplant caponata. Lastly, the chefs will present an elegant chocolate trio comprised of a dark, milk and white chocolate mousse layered on a chocolate dacquoise with dark chocolate ganache, bitter-sweet chocolate sauce and a fresh raspberry puree.
